My daughter is on a high fat diet which seems pretty rare. It’s a struggle to find full fat toddler pleasing recipes these days so here is a favorite of ours. 

Mashed Potatoes So Creamy 

Ingredients: 3 baking potatoes, 3 T butter, salt, a handful of shredded cheddar and 1 cup heavy cream 

  1. Peel, slice and boil potatoes so they are mashable (20 min).
  2. Throw cheese and butter in mixer followed by hot potatoes, then mix well. 
  3. Gradually add cream and salt, adjusting to taste. I usually add so much cream that it looks like too much, but the potatoes always set up nicely. 

The last time I made this I cooked 1/3 box of spaghetti and used a few spoonfuls of potatoes as the sauce. My child who refuses 90% of foods devoured it.
